Roman Pinsa & Pizza in Teglia Al Taglio

The Science of 85% Hydration & Flour Blends

Roman Pinsa (derived from the Latin pinsere, meaning to stretch or press out) is famous for its hyper-digestible, oval-shaped cloud crumb. Modern Pinsa formulation uses a precise tri-blend of strong soft wheat flour, soy flour (for structural tenacity and golden crust Maillard browning), and rice flour (which holds water without forming heavy gluten, yielding feather-light crunch).

Baking Profile in Modular Electric Decks

Unlike Neapolitan which requires searing top wood flames, Roman Al Taglio and Pinsa are baked in specialized electric deck ovens (such as Moretti Forni or Castelli) at 285°C to 300°C for 8 to 11 minutes. This long exposure dries the crumb interior while gelatinizing exterior starches into a thin, glass-brittle shell that doesn't collapse under heavy toppings.
